Ynyshir Restaurant Faces One-Star Hygiene Rating After Inspection

Ynyshir Restaurant and Rooms, renowned as Wales’ only two-Michelin-starred establishment, has received a troubling food hygiene rating of one out of five. This rating follows an inspection conducted by the Food Standards Agency in November 2025, which highlighted the need for “major improvement” in food safety management practices.

The inspection report noted that while the hygiene of food handling was “generally satisfactory,” significant concerns were raised regarding the cleanliness and condition of the restaurant’s facilities. The findings have cast a shadow over what has been celebrated as one of the finest dining experiences in the world, with a tasting menu starting at £468 per person.

In light of the rating, Gareth Ward, the chef and owner of Ynyshir, expressed the restaurant’s commitment to addressing the issues identified during the inspection. A spokesperson for the venue emphasized that they take the outcome seriously and have already begun implementing corrective measures to improve administrative and procedural aspects of food safety.

The restaurant attributed the low hygiene rating, in part, to its “specialised” Japanese-inspired cooking methods, which diverge significantly from conventional kitchen operations. Despite this setback, Ynyshir remains confident in its safety protocols and has requested an early re-inspection to restore its reputation.
